The Ingredients

For 3 servings

  • 1 egg yolk (size M)
  • ½ tsp vanilla
  • 50 grams of (keto-friendly) chocolate of your choice (broken into small pieces)
  • 200 ml full-fat unsweetened coconut milk

The Preparation

In a saucepan, combine the coconut milk with the egg yolk and vanilla, and heat it over low heat, stirring continuously, for about 10 minutes. Make sure the mixture is almost but not quite boiling! (Otherwise, you’ll get egg yolk pieces in the pudding). Keep stirring continuously.

Turn off the heat and add the chocolate pieces. Slowly stir the mixture until the chocolate has melted, and you have a smooth, even mixture.

Divide the pudding into lovely glasses and refrigerate for at least 2 hours to set.

Serve as is or with a bit of homemade whipped cream and red fruit.
