This recipe is truly incredibly delicious! It’s very simple to prepare and ideal to take with you when you’re on the go!

Divine Spinach, Egg, Ham, Cheese Stacks

Spinazie stapels


  • 3 eggs
  • 2 handfuls of fresh spinach
  • pepper and salt (to taste)
  • 4 slices of ham of your choice
  • 3 slices of cheese of your choice
  • oil or butter of your choice (for frying)


Put the eggs, spinach, pepper, and salt in a blender and blend until smooth.

Heat your choice of cooking fat (I used coconut oil) in a large skillet, place 4 slices of ham in it, and pour the egg-spinach mixture over them. Let the egg cook over low heat.

Top the egg with torn pieces of cheese and fold the omelet in half. Place some more cheese pieces on top of the folded omelet and fold it again. Let it cook for a few more minutes with a lid on the pan.

Allow the omelet to cool completely, then refrigerate it for a few hours.

Slice the omelet and enjoy!
